Vegan Summer Sherbets and Sorbets

We’ve gotten past the June gloom and are full-swing into summer, which means enjoying the long days outside with some of our favorite treats. My personal favorite is the cashew Stracciatella sherbet, a lighter, unorthodox take on the classic Bergamese gelato that’s just as tasty, if a little nuttier, than the original. Kiwi Sorbet

Ingredients

  • 1 cup (250 g) kiwifruit
  • 2½ cups (6 dls) cashews
  • ¾ cup (200 g) dates, pitted
  • Vanilla, cardamom, or cinnamon (optional)

To Make:

Peel the kiwis, cut them into small pieces, and freeze them in freezer bags. Blend the dates and frozen kiwis in a food processor until you have a delicious, creamy sorbet.

Stracciatella Sherbet

Ingredients

  • 2½ cups (6 dls) cashews
  • ½ cup (1 dl) agave nectar
  • ¾–1¼ cups (2–3 dls) water
  • 1 teaspoon vanilla
  • 1–2 tablespoons coconut oil (optional)
  • ¼ cup (½ dl) hazelnuts
  • 3 tablespoons raw cacao nibs

To Make:

Blend the cashews in a food processor until you have nut butter. Add agave nectar, water, and vanilla and mix. Chop the hazelnuts and carefully mix the nuts and cacao nibs into the mass. Put it in the freezer, and after a couple of hours you will have the most delicious dessert. For a different taste, try replacing cashews with hazelnut butter or almond butter.

Immune-Boosting Bao Sorbet

Ingredients

  • 1 pineapple, peeled
  • 1 apple, peeled
  • 1 lemon, peeled
  • 1 tablespoon baobab powder
  • 1 teaspoon camu camu powder
  • 1 tablespoon honey

To Make:

Freeze the fruit. Blend all the ingredients together in a power blender and refreeze.

Alternatively, you can juice the fruit, blend in the baobab, camu camu powder, and honey, and freeze in popsicle molds.
