Sergei’s Young Coconut Dream Cake

Young Coconut Dream Cake

Serves 12

Crust Ingredients
  • 1 cup raw unsoaked walnuts
  • ½ cup of your favorite pitted dates
  • ¼ cup young coconut water
  • 4 tablespoons raw carob
  • 1 small papaya
To make

Blend the walnuts and dates in a food processor until the mixture is smooth. Mix in the carob and the coconut water. Spread one layer of crust out on a plate. Place sliced papaya on top of first layer. Place second layer of nuts and dates on top.


Icing Ingredients
  • 1 cup young coconut meat
  • Water, enough to blend into thick topping
  • 1 tablespoon raw agave nectar
To make

Blend all the ingredients in a power blender. Spread icing on cake. Decorate with fruit slices and nuts.
