Tofu Steak Ingredients:
- 2 pounds firm tofu packaged in water
- 1½ cups cornmeal
- ½ cup hempnuts
- 4 cups coconut oil or other high-temperature frying oil
Succotash Ingredients:
- 2 garlic cloves, minced
- 1 medium red onion, diced
- 2 cups corn kernels
- 1 cup red pepper, diced
- 3 tablespoons agave nectar
- salt and pepper to taste
- ½ cup tomatoes, diced
- ½ cup black beans, cooked or canned
- 1 cup scallions, chopped
- 1 jalapeño, deseeded and minced
- 2 tablespoons fresh-squeezed lime juice
- 3 tablespoons kecap manis

French Green Lentil and Vegetable Roast with Rich Gravy
Loaf Ingredients:
- 3 shitake mushrooms
- 2 tbsp oil
- 1 small onion, diced
- 1 carrot, peeled and diced
- 2 stalks celery, diced
- 2 cloves garlic, crushed
- 2 sprigs thyme, taken off the stalks
- ½ cup dry French green lentils
- 2 tbsp shoyu
- Small piece of kombu
- 2 tsp brown rice miso
- ½ cup brown breadcrumbs
- ¼ cup ground almonds, toasted
- 3 tbsp sesame seeds, toasted
Gravy Ingredients:
- 3 shitake mushrooms
- 1 large onion, thinly sliced
- 1 tsp toasted sesame oil
- 2 tbsp tahini
- 2 tbsp soy sauce
- 5 tsp kuzu
- 1 tbsp mirin
Main Dish
Vegan To-furkey with Brown Rice and Amaranth Stuffing and Miso Gravy
Stuffing Ingredients:
- 1 stem celery, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup mushrooms, finely chopped (optional)
- 1 tablespoon cooking oil
- 1½ cooked brown rice
- 1 cup cooked amaranth
- 1 tablespoon fine orange zest
- ½ cup soaked arame
- ½ cup water
- 1 small apple, diced
- ½ cup parsley, finely chopped
- 2 teaspoons lemon thyme, minced
- 2 tablespoons wheat-free tamari (or substitute)
Tofu Ingredients:
- 4 pounds fresh firm or extra-firm tofu, pressed and drained
- 1 teaspoon agar powder
- 1 tablespoon fresh summer savory, or 1 teaspoon dried
- 2 tablespoons zesty peck (recipe below)
- 2 tablespoons arrowroot powder
- 1-3 tablespoons water
- 2 tablespoons wheat-free tamari (or substitute)
- ½ cup kombu dashi
- 2 shallots, roasted
Gravy Ingredients:
- 3 tablespoons arrowroot powder
- 3 cups kombu dashi or vegetable broth
- wheat-free tamari (or substitute) to taste
- 1 cup mushrooms, diced (optional), or 1 tablespoon dried shiitake mushrooms ground into a powder (optional)
- ⅛ cup miso
- freshly ground pepper
- 2 tablespoons sesame oil
Zesty Peck Ingredients:
- ¾ cup fresh rosemary
- ¾ cup fresh sage
- 3 tablespoons fresh lemon thyme
- 2 heads crushed garlic (¼ cup)
- ¼ cup dried sea palm fronds
- 1 tablespoon crushed black peppercorns
- 3 tablespoons organic lemon zest
- ¼ cup smoked dulse

Pecan Pie and Vegan Whipped Cream
Pecan Pie Ingredients:
- 1 pre-baked, gluten-free pie crust
- 1 tablespoon agar flakes
- ½ cup non-dairy milk
- ¼ cup maple syrup
- ½ cup brown rice syrup
- ½ tablespoon fresh ginger juice or minced ginger
- 1 teaspoon cinnamon
- 1½ cups coconut milk
- 1 tablespoon arrowroot powder
- 1 tablespoon vanilla extract
- 2½ cups prepared pecans
- ¼ cup Medjool dates, pits removed, thinly sliced
- ¼ teaspoon salt
- 1 stick soaked and minced kombu
Vegan Whipped Cream Ingredients:
- 2 teaspoons agar flakes
- 1 cup amazake
- 1 cup coconut milk
- ½ vanilla pod or 1 teaspoon vanilla extract
- salt to taste

Rich Raw Chocolate & Vanilla Torte
Cake Ingredients:
- ⅓ cup raw cashew nuts
- scant ½ cup raw almonds
- scant ⅔ cup raw walnuts
- 2 pinches of ground cinnamon ¼ cup raw pumpkin seeds
- ½ cup unsulfured dried apricots, chopped
- 1 heaping teaspoon xylitol crystals
- 1 tablespoon Buckwheaties
- yacon syrup, for sticking the lining paper
Filling Ingredients:
- scant ¾ cup raw cacao butter generous ¾ cup raw hulled
- hemp seeds
- ⅔ cup raw cashew nuts
- 1 avocado, pitted and peeled scant ⅓ cup raw cacao powder
- scant ⅓ cup xylitol crystals pinch of pink crystal salt
Vanilla Layer Ingredients:
- ⅓ cup raw coconut oil
- ⅓ cup raw cashew nuts
- 6 drops vanilla essential oil
- 1 tablespoon raw agave nectar
Cashew Nut Cream Ingredients:
- 2 tablespoons raw coconut oil ½ cup raw cashew nuts
