Recipe Monday: Strawberry Apple Cobbler

We featured this strawberry apple cobbler recipe back in 2015, but soon the leaves will be changing and the temperatures will begin to chill once more—harbingers of fall and, of course, the start of apple picking season! And we are quite ready for dessert. Enjoy this delightfully tart treat for the cusp of summer and fall:

Strawberry Apple Cobbler

Makes a pan 12 x 10 x 2 ½ inches

For the Crust
  • 4 ½ cups pecans (do not soak)
  • 3 tablespoons well-packed, finely chopped dates
  • 2 tablespoons cinnamon
  • 1 tablespoon vanilla
  • ⅛ teaspoon salt
For the Filling
  • 8 cups sliced apples
  • 5 cups sliced strawberries
  • ¼ cup lemon
  • 1 tablespoon vanilla
  • Pinch of salt
To Make the Crust

In the bowl of your food processor fitted with the “S” blade, process 3 cups of the pecans with the cinnamon, vanilla, and salt for one minute. Continue to process while adding small amounts of the date. Then place in a bowl and add remaining 1 ½ cups pecans. Press the crust into your pan, setting aside 1 ½ cups of this crust mixture for the topping.

To Make the Filling

Combine all the ingredients in a bowl and mix well. Evenly distribute the filling on top of the crust. Then crumble the remaining crust on the top. This dessert is lovely served with vanilla ice cream or crème fraîche.
