Recipe Monday: Seaweed Salad

Mondays can be rough, and sometimes the last thing you want to do when you get home from work is plan and cook the night’s dinner. Enter this seaweed salad! It can be made ahead of time, or you can let it marinate while you kick back and decompress from the day. It’s the perfect simple and healthy side dish—make extra to get you through the rest of the week.

Seaweed Salad

Serves 2

  • 1.75 oz. bag of wakame (presoaked for at least 30 minutes to soften)
  • 2 tablespoons tamari sauce
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 small clove garlic, finely chopped
  • ¾ in piece ginger, finely chopped
  • 2 tablespoons seaweed powder mix
To Make

Drain the wakame and chop into bite-sized pieces (or pulse in a food processor). Place in a bowl and mix through with the other ingredients. It can be eaten straight away, but the flavors will infuse best if you allow it to marinate for about 30 minutes.
