  • ½ small white cabbage
  • 1 carrot
  • 1 handful parsley
  • ½ cup  raisins or cranberries
  • ½ cup “You Just Might Think It’s Créme Fraîche,” recipe below
  • 2 tablespoons tahini
  • Salt and pepper

Chop the cabbage finely. Grate the carrot and chop the parsley. Stir the sour cream and tahini together, adding the parsley, salt, and pepper. Mix all the ingredients, including the raisins, together in a bowl.

You Just Might Think It’s Créme Fraîche


  • 1 cup cashews, soaked for 2 hours
  • ⅓ cup water
  • 1–2 teaspoons apple cider vinegar or lemon juice
  • ¼ teaspoon salt

Drain the nuts and mix all the ingredients together with a hand blender. The cream will thicken if you leave it for a while because the nuts absorb the water.
